Green Tea was consumed in powder form in the 12th Century when it became popular in Japan. Matcha is made from "Ten-Cha" grown under the shade to enhance sweetness flavor, and ground its soft leaf part only gently with stone mill. Shiki Matcha can be used for baking as well.
